🌱 Heirloom vegetables

Heirloom varieties are older, open-pollinated varieties that have been grown and saved by gardeners and farmers for many generations. There isn't one exact age requirement, but they're generally varieties with a long history, often 50+ years.


Typical characteristics:


  • 🌱 Seeds can generally be saved and replanted, producing plants similar to the parent.
  • 🍅 Often prized for flavour, colour, shape, or uniqueness rather than uniformity.
  • 🌾 May have interesting regional or family histories.
  • 🥕 Can be less uniform in size and appearance.
  • 🐝 They are generally open-pollinated, meaning pollination occurs naturally.

🌿 Non-heirloom vegetables

This is a broad category that includes modern varieties developed more recently. Many are bred for things like:

  • Higher yields
  • Disease resistance
  • Uniform size and shape
  • Longer storage
  • Easier harvesting
  • Better shipping or handling

Some are open-pollinated, while others are hybrids.

For example, a hybrid tomato may be created by crossing two specific parent varieties to combine desirable traits. You can save its seeds, but the resulting plants may not reproduce the same characteristics as the original hybrid.


An important distinction

Heirloom ≠ organic.
An heirloom vegetable can be grown conventionally or organically.


Hybrid ≠ GMO.
Most hybrid vegetables are created through traditional plant breeding and are not genetically modified (none GMO).



🌱 What Does GMO Mean?

GMO stands for Genetically Modified Organism. When we talk about GMO vegetables, we mean plants whose genetic material has been deliberately changed using modern biotechnology to give the plant a specific characteristic.


For example, genetic modification may be used to help a crop resist certain insects or diseases, tolerate particular herbicides, or develop a specific nutritional or quality trait.


GMO Does Not Mean Hybrid

These terms are often confused:


  • Heirloom: An older, traditional variety that has been passed down through generations.
  • Open-pollinated: A variety that can generally be pollinated naturally and, when properly isolated, can produce seed that grows plants similar to the parent.
  • Hybrid: Created by deliberately crossing two selected parent plants. Most hybrids are produced through conventional plant breeding and are not GMO.
  • GMO: Genetic material has been deliberately altered using biotechnology.

A vegetable can be hybrid without being GMO, and a vegetable can be heirloom without being organic.


At Root’em Up Farm, we are particularly interested in heirloom, heritage and open-pollinated varieties because of their flavour, diversity, history and potential for seed saving.

Heirloom vegetables are traditional varieties that have been grown, selected, and passed down through generations. Many were valued for their exceptional flavour, unique colours and shapes, ability to grow in particular regions, or simply because they were a family favourite. Today, many of these varieties are becoming increasingly difficult to find.

Growing a wider range of plant varieties helps maintain diversity within our food crops. Different varieties may have different characteristics, including their ability to tolerate particular growing conditions, pests or diseases.

That diversity is an important resource for future gardeners and farmers.


🌱 Why Is Seed Saving Important?

For thousands of years, farmers and gardeners saved seeds from the plants that performed best for them. Those seeds were replanted the following season and passed from one generation to the next.


Seed saving is one of the simplest ways we can participate in preserving that tradition. When you save seed from appropriate open-pollinated varieties, you aren't simply preparing for next year's garden—you are helping keep a variety in cultivation.

Over time, seed can travel from one garden to another, from one family to another, and from one generation to the next.


A Seed Is More Than Next Year's Plant

When a rare vegetable disappears from cultivation, its unique characteristics can disappear with it. By saving and sharing seed responsibly, gardeners can help prevent that loss. A variety that is grown, saved and replanted has a much better chance of continuing into the future.

Not every vegetable is suitable for simple seed saving, and different crops require different techniques to prevent unwanted cross-pollination. But for gardeners willing to learn, seed saving can be a rewarding part of growing your own food.

Culinary Garlic and Black Garlic

What we sell...


Our garlic is grown with care and harvested, cured, and prepared by hand. We also specialize in black garlic, a naturally fermented garlic known for its rich, sweet, complex flavour.

🧄Inchelium Red


It has large, attractive bulbs with creamy-white skins and is wonderful for fresh cooking, roasting, sauces, dressings and garlic butter. Its mellow flavour makes it an excellent everyday garlic for cooks who want plenty of flavour without excessive heat.

Type: Softneck


Appearance: Large white bulbs with subtle purple-red colouring in the cloves


A Pacific Northwest heirloom with a smooth, mellow flavour, Inchelium Red is a wonderful everyday garlic. Delicious roasted, sautéed or blended into sauces and dressings.


🧄Russian Red


It has a satisfying balance of heat and sweetness, making it an excellent choice for cooks who want garlic with plenty of character. Its large, easy-to-peel cloves are wonderful for roasting, sauces, pasta, marinades and everyday cooking.

Type: Hardneck


Appearance: White bulbs with reddish-purple cloves.


Bold, rich and full of flavour, Russian Red is a favourite among garlic lovers. With beautiful reddish-purple cloves and a satisfying spicy bite, it brings plenty of character to your favourite dishes.


🧄 Spanish Roja


It has a delicious balance of heat and sweetness that mellows beautifully when cooked. A favourite among garlic enthusiasts, it's especially wonderful for roasting, sauces, aioli, pasta and Mediterranean-inspired dishes.

Type: Hardneck


Appearance: Creamy-white bulbs with striking purple-red cloves


A treasured heirloom for garlic lovers, Spanish Roja delivers bold, complex flavour with a beautiful purple-red clove. Perfect for roasting, sauces, aioli and dishes where you want the garlic to shine.


🧄 Music

Music is a popular Canadian heirloom hardneck garlic known for its large bulbs, oversized cloves and rich, full-bodied flavour. It has a wonderful balance of sweetness and heat, making it an excellent all-purpose culinary garlic. Its large cloves are easy to peel and especially satisfying to roast, sauté or use in sauces.

Appearance: Large white bulbs with purple-striped skins


Large, beautiful bulbs with big, easy-to-peel cloves and rich, full-bodied flavour. Music is a dependable favourite for everyday cooking, roasting and garlic lovers alike.


🖤 Black Garlic

Black garlic is made by slowly aging fresh garlic under carefully controlled temperature and humidity, naturally transforming the cloves into soft, dark, caramelized morsels with a rich, complex flavour. Unlike fresh garlic, black garlic has a mellow sweetness with notes of balsamic, molasses and dried fruit, with very little of the sharp heat associated with raw garlic.

Its soft, spreadable texture makes it wonderfully versatile. Enjoy it straight from the clove, spread it on crusty bread, blend it into sauces and dressings, or use it to add depth and umami to meats, vegetables, pasta and marinades.

Aged slowly. Naturally transformed. Deliciously different.
